Escoffier Feast|一期一会,限定赏味

八月末,在野生菌退隐江湖前最后的高光时刻,抓住鲜菌季的尾巴,埃科菲厨皇协会携手上海素凯泰酒店La Scala意大利餐厅,特邀酒店行政总厨Chef Duncan 定制菌菇菜单,呈现了一场星级至味菌宴。


At the end of August, before the wild mushrooms retreated into the rivers and lakes, catching the tail of the fresh mushroom season, Disciples d’Escoffier  China partners with La Scala and specially invited Executive Chef Duncan to present a star-studded fungus feast.

作为《疯狂的冰箱》、《疯狂食验室》、《拜托了煮夫》等美食节目的特邀主厨,也在电视剧《尚食》《珍馐记》中出任美食指导,是从业30年的实力派餐饮人,曾荣获《中华金厨奖》,精通日料、中餐、西餐等多种烹饪技艺。


As the guest chef of "Crazy Refrigerator", "Crazy Food Lab" and other food programs, chef Duncan also served as a food creative director in the TV series "Royal Feast" and "Delicacy". A powerful caterer over 30 years’ experience, he has won the "China Golden Chef Award" and is proficient in cooking techniques worldwide.





此次野生菌主题的创意呈现,7种菌菇,11道菜品。通过Chef Duncan和厨师团队反复尝试,打破风格边界,为每一款菌子量身定制菜式,把握每一道菜品的口味衔接和配合,像一场编排严密的交响乐,交织着跌宕起伏的味觉旋律,层次丰富。


The wild mushroom-themed creative presentation, with 7 types of mushrooms, 11 dishes. Through repeated attempts by Chef Duncan and the chef team, they break the boundaries of styles and tailor dishes for each type of mushroom, intertwined with ups and downs of taste melody, rich in layers.

犹如意大利文艺复兴时期的浪漫花园,菜单精选有机鲜材入馔,食客可以在装饰别致的用餐室或厨师桌旁,品尝地道质朴的意式佳肴。


Inspired by Italian Renaissance gardens, the menu features organic fresh ingredients. The Chef’s Table is the focal point of the restaurant, putting the theatre of cooking on display where diners can enjoy the chefs’ performance and flair.




Disciples D’Escoffier

埃科菲厨皇协会以法国荣誉骑士团勋章获得者奥古斯特·埃科菲(Auguste Escoffier)先生的名字命名,成立于1954年。作为世界上重要的国际美食协会之一,协会旨在推广由奥古斯特埃科菲厨师创造的伟大的烹饪传统及厨艺。协会现在在意大利、德国、瑞士、荷比卢(荷兰、比利时和卢森堡)、墨西哥、日本、美国和加拿大等国家和地区开设有代表处,在法国拥有2,000多名会员,更有20,000多名会员遍布全球各地。


Disciples d’Escoffier was created in France in 1954 to perpetuate the memory and the values of the “father of French gastronomy”, Auguste Escoffier. Association of Chefs, Food & Beverage professionals and foodies, Disciples d’Escoffier aims as respecting the culinary traditions, promoting a perpetuate improvement of cooking practices, as well as sharing the knowledge and passion of gastronomy.
